Chicken, Aubergine, Spinach and Lentil Curry, Quick Flatbreads, Frozen Fruit Sorbet

Ingredienti

Preparation Before Demo

  • 320 - 350 g aubergines diced (1 cm) (1-2 aubergines)
  • 400 g chicken breasts halved horizontally then sliced (0.5 cm)
  • 200 g sugar snap peas (opzionale)

Quick Flatbreads

  • 350 g bread flour plus extra for dusting
  • 250 g plain yoghurt
  • 1 tsp baking powder
  • 1 tsp fine sea salt
  • ¼ tsp granulated sugar

Frozen Fruit Sorbet

  • 50 g sugar adjust to taste
  • 500 g frozen fruit (e.g. banana and strawberry mix)
    o fresh fruit cut in pieces then frozen in a single layer (see tip)
  • 2 tsp lemon juice (opzionale)
  • 1 egg white from medium or large egg (opzionale)

Aubergine, Spinach and Lentil Curry

  • 120 g onions quartered (1 onion)
  • 2 garlic cloves
  • 10 g fresh root ginger peeled, cut in round slices (2 mm)
  • 1 fresh green chilli halved (with seeds)
  • 15 g olive oil
  • 150 g red split lentils rinsed
  • 15 g tomato purée
  • 300 g water
  • 3 tsp garam masala
  • ½ tsp fine sea salt
  • 1 vegetable stock cube (for 0.5 l)
  • 350 g cherry tomatoes halved
  • 400 g coconut milk
  • 150 g fresh spinach leaves
