Ingredienti

  • 2 eggs
  • 280 g courgettes, cut into small cubes
  • 120 g carrots, cut into small cubes
  • 100 g frozen green peas
  • 1200 g water
  • 1 tsp salt, plus extra to taste
  • 250 g parboiled rice (approx. 15 minutes cooking time)
  • 200 g canned tuna in oil (weight includes oil), drained, cut into pieces
  • 100 g olives, pitted, whole or chopped
  • 15 - 20 g pickled gherkins, cut into slices
  • 1 sprig fresh mint, leaves only
  • 1 tbsp extra virgin olive oil
  • 1 - 2 tsp vinegar (opzionale)
    o 1 - 2 tsp lemon juice (opzionale)
  • 7 cherry tomatoes, cut into halves or quarters
